The Facts of Lemons

Did you know…?

India is the number one producer of lemons and limes, with about 16% of the world's overall output.

Also, did you know lemon trees bloom and produce fruit year-round? Each lemon tree can produce between 500 and 600 pounds of lemons in a year.

This simple, healthy recipe uses lemon juice to make a tangy hummus. Try it with pita bread, chips, or vegetable sticks!

 

Sundried Tomato Hummus

Yields 2 servings. Prep time 45 minutes. 

1 cup Chickpeas, soaked overnight
2 Tbsp Olive oil
3 Tbsp Lemon juice
1/4 cup Tahini
Handful sun-dried tomatoes
Salt and pepper to taste

Soak chickpeas overnight.
Rinse, drain, and cook chickpeas in boiling water for about 40 minutes.
Drain and let cool.
Puree the chickpeas with the remaining ingredients.

    A glass of warm water with the juice of half a lemon squeezed into it is said to have a lot of benefits for the body if consumed first thing in the morning. I can actually feel it calming my stomach.
