Here's a fun and flavorful salad for you to try. This cucumber salad is tangy, sweet, and nutty all at once. It's one of the favorite salads here at iii, so the next time you visit, it may be on the menu!
Cucumber and Peanut Salad –
Serves – 4
Time to prepare – approximately 20 mins
Ingredients
3 cucumbers
3/4 cup roasted peanuts (unsalted)
fresh cilantro, chopped
Dressing :
1/2 TBS fresh ginger, grated
1-2 lemons (juice)
1 TBS olive oil
2 tsp salt
1/2 tsp pepper
1 TBS brown sugar
2 tsp cumin powder
1 tsp coriander powder
1 tsp paprika
Directions –
Peel the cucumbers and cut into small pieces.
Place peanuts in food processor and pulse just until roughly chopped. If you do not have a food processor, you can place peanuts into a bag and use a mallet to lightly crush.
Mix all dressing ingredients together and whisk.
Pour the over the cucumbers.
Add most of the peanuts and cilantro and mix well. Add more salt, etc. as you like.
Garnish with the rest of the peanut and cilantro.
Serve immediately. If you need to make ahead of time, keep the dressing separately and mix only just before serving.
I liked the salad. I always like to tweak the recipes by replacing the ingrdients with something similar in taste. next time for the dressing I am going to replace Jaggery with Honey
